Our Bug is out of town, so we had a Date Night In. My husband and daughter have been so patient and accommodating during the journey into the world of “sugar-free.” Tonight, we made Greek pizzas. To make my husband’s pizza, I made a garlic cream sauce for the base. I poured it onto a pizza crust. Then, we put spinach, feta, kalamata olives, mozzarella and asiago cheese on top. It looked and smelled heavenly!
I made myself spinach and feta stuffed portobello mushrooms. Every year for Thanksgiving and Christmas, I make my Moma’s stuffed mushrooms. This is a giant version of those, minus the Ritz cracker crumbles on top. Spinach, feta, and cream cheese make the filling. I sprinkled the top with asiago and parmesan cheese. Yum!
We finished out the meal with Chateau St. Michelle Autumn Harvest Reisling. We have a special place in our hearts for Chateau St. Michelle as that was the wine we shared on our honeymoon when we sat on the balcony of our suite and looked at Hubbard Glacier. Incredible experience! If you ever get the chance to cruise to Alaska, go!!!
